Yes, there is a switch inside the battery compartment where you can toggle auto-off.

I just got the PT18 thermometer. Press the C/F button on the back for about a second to turn off. Release the button when the screen says "OFF".

No. This is meant for temping your product intermittently while or after cooking. You sound like you need an oven safe, leave-in, meat temp gauge.
